In the early 1970s, a new method of grilling Makchang (beef or pork intestines) over charcoal and dipping it in a special Doenjang (soybean paste) sauce was developed, helping to popularize this dish across Daegu. Over time, advancements in techniques for aging or boiling makchang have refined its preparation, and today, the once-characteristic odor of traditional Makchang grills has largely disappeared from local restaurants. Despite these changes, the dish continues to enjoy widespread popularity, thanks to innovations in cooking techniques, packaging methods that preserve freshness, and the development of unique and differentiated Doenjang sauces that enhance its flavor.
