"Mungtigi" is a term derived from the Gyeongsang dialect, referring to fresh beef cut into chunks approximately the size of a thumb joint. Since the late 1950s, it has become a beloved local dish in Daegu, traditionally made by slicing the inside thigh meat from the cow's hind leg and dipping it into a marinade of sesame oil, garlic, and coarsely ground red pepper powder. While raw beef, known as "Yukhoe", is a popular dish in Korean cuisine, typically made with Korean beef, this specific preparation method for fresh meat is unique to Daegu.
