"Nureun Guksu" is the nickname for Gyeongsangdo-style knife-cut noodles, a beloved local specialty. One theory behind the name is that it comes from the addition of soybean powder to the dough, which gives the noodles their distinctive light yellow color. Another theory suggests that the name refers to the method of rolling the dough thinly with a rolling pin. Unlike other noodle dishes, Nureun Guksu does not rely on seafood or beef bone broth. Instead, it is made with a rich and flavorful anchovy broth, resulting in a clean, mild taste that highlights the natural flavors of the noodles.
